Pam's Pork Chops & Rice

   * 4-6 pork chops, I use the thin-sliced boneless ones (but that's just me.)
   * 1 small onion, sliced (I leave out the onion)
   * 1 medium green pepper, chopped
   * 1 stalk celery, chopped
   * 2 small cans Hunts tomato sauce
   * 1 can mushrooms (drained, but not squeezed)
   * 1-1/2 cup boiling water
   * 2 T brown sugar
   * salt & pepper
   * 1 c  uncooked white rice


Brown pork chops on both sides, in about 2 T oil.  Remove to a plate, the toss in onion, pepper, and celery, and cook until tender.  Add water, brown sugar, salt and pepper (use your own judgment with that) and 1-1/2 cans of the tomato sauce.  Heat and stir and bring to a boil.  Add rice and mushrooms and stir.  Add pork chops on top and cover.  Cook on low-medium heat about 1/2 hour, until the water is absorbed.  Add the rest of the sauce on top of the chops.  Check and make sure it's not sticking on the bottom and add a little more water if it is.  Cook another 15 minutes.
