There's a story behind this one (isn't there always?)  My friend Bonnie gave me this recipe.  She had this at a restaurant that specializes in peach fare and it was SO good she asked for the recipe...and they gave it to her!!  Since then she has made it quite a bit, and has managed to get many of us addicted to it.  It's so good, you will have to force yourself to stop eating it.  I am not kidding.

I am making this for dessert for our Christmas Eve dinner, because once in a while you need a break from all the pie.  I'm not going to call it by it's real name, because I don't want to get sued and because the real name is kind of misleading anyway, and doesn't really describe what this is.  So I'm just going to call it.....

That Peach Stuff.
1-1/2 cups flour
2 t baking powder
1 c milk
2/3 c peach juice (from the can)
1/2 - 3/4 c sugar
2 pkg vanilla pudding (cook and serve, not instant)
3 c chopped canned peaches
16 oz cream cheese
2 eggs
1/3 c oil

Mix the flour, pudding, baking powder, eggs, milk, and oil.  Pour into a 9x13" pan, and top with chopped peaches.  Mix peach juice, sugar and cream cheese, and pour over the top of the peaches.  Sprinkle with cinnamon, if you want.

Bake in a 350 degree oven for 40-45 minutes.  Hard to tell when it's done because parts of it will be firm and parts will still be sloppy, but don't cook it any longer than that...I learned the hard way.

The best way to serve it is still warm, topped with whipped cream.
